Chicken Noo Noo Soup

When my daughter was little I would always call noodles ‘noo noos’ and I admit I still do it to this day lol!

Today I made some rock star Chicken Noo Noo Soup that is so soothing for the soul.

I used up some leftover turkey soup stock that I had made at Christmas time from the leftover turkey carcass. After making it I froze it in a mason jar for future use and the future is now lol. Actually I got several jars from the batch which is great because this stock can be used in more than just soup.

You could use it in a gravy, a stew, or even as a liquid base for a whole new meal in an Instant Pot, Slow Cooker, or even a Cast Iron pan in the oven. For example throw in some chicken parts, potatoes, carrots, onions, and/or what you like, add some of the stock, salt and pepper and put it in the oven at 325 degrees for about 1.5 hours and voila!

Jars Are Great!

Mason type glass jars are excellent for freezing leftover soup, stock, chilis and more! Just don’t fill them to the top. You need to leave some space for the expansion when it freezes.

Waste Not

I do not waste anything when it comes to food. I love using these go-to’s for creations like today’s soup that I made.

Check out this video I made of the soup as it was cooking. And note the noo noos are not in here yet… they were boiling on the stove burner behind. I don’t like to add them until just before serving. And they too will go in a mason jar or similar and only be added to the soup as I warm up what I am eating at one sitting.

However, if you are wondering what the things in the soup that look like noodles are, they are cauliflower shreds! They are from one of those bags of slaw type veggies. I love using those for soups and such.

One day I will share with you all my pea soup hack that makes it way more nutrient dense without anyone even knowing… but Shh you will have to promise not to tell though 😉

And these are the noo noos I used. Actually this was my first time using these and I have to say I like them the best for Chicken Noodle Soup. They are La Molisana Semi Di Melone N 61, Trafilata Al Bronzo. I have no idea what all that means but anyhoo here is a picture of the delightful little critters.

The little noodles I add to the chicken soup just before eating so they don’t get all mushy. Aka “Noo Noos” 🙂

In closing I want to remind everyone that you do not need a recipe to cook soup. I never make it the same way twice.

You throw in whatever you have around the kitchen that remotely seems like it will go with the style of soup you are making and presto…soup 🙂

Leafy 🅶🆁🅴🅴🅽🆂 to The Rescue!

While scrolling emails this morning, one caught my eye from Anthony Williams, The Medical Medium, and it was about leafy greens. Wow. What a great reminder to self, I thought. Then I thought, maybe I should write a blog post about this to help others know the power of these babies!

Here is a jaw dropping reminder and quote from Anthony:

“If you’re not getting enough leafy greens, the future of your health is in jeopardy. That might seem like a strong statement, but it’s the truth. If you’re not consuming enough raw leafy greens regularly, you will eventually experience some health challenges. Raw leafy greens, such as lettuce, spinach, swiss chard, mâche, watercress, collard greens, purslane and kale, are that critical for our wellbeing.” Anthony Williams

I for one will be picking some up today! I do tend to overlook these for some reason. So now it is time to change that.

Anthony also talks about the microorganisms in these leafy greens and how they are responsible for producing the ultimate methylated form of B12 that absorbs into the channels of our body and finds its way back to our liver when called for. Here is what he says about that: “this B12 is the liver’s number-one most important mortar to hold together all the bricks that build the castle of your health. When there’s enough of it, the liver stores ample amounts to send into the bloodstream as an assistant to almost every vitamin, mineral, and other nutrient that it releases to aid your body in any way. It’s the B12 that makes everything go right”.

Wow Go B12! I for one have been studying the effects of Vitamin B12 Deficiency for years and am allows encouraging people to get their B12 levels checked, so this hit home with me. B12 is CRUCIAL to our health and is synergistic in the uptake of all nutrients.

Sweeping The Intestinal Walls

Anthony also hits home on this powerful point:

“Additionally, raw leafy greens sweep the walls of the intestines, gently massaging your duodenum, small intestine, and colon, clearing away bad bacteria and rancid fats and proteins that have gone undigested for years. This build up is part of the reason someone can experience bloating or gastritis—and simply taking a probiotic isn’t going to fix it. Probiotics don’t kill bad bacteria. They don’t kill streptococcus or E.coli. A high quality probiotic definitely has a place in health, but they don’t do even a fraction of the healing work that elevated biotics do. The trace minerals found in leafy greens are prebiotics that feed good bacteria and kill off bad bacteria.”

Well like I said, I know what I am getting at the grocery store today. 🙂 Oh and Anthony says it is best to eat these raw…..

Quote from Anthony: Oftentimes people like to cook leafy greens, such as collard greens, spinach, bok choy, swiss chard, and kale. While these greens are incredibly healing in their raw form, it’s best to avoid cooking them. When leafy greens are steamed, sautéed, fried, roasted or cooked in any other way, it alters the naturally occurring oxalic acid (which is not at all harmful when leafy greens are raw) and makes it into a form that becomes less usable by the body. This is one reason leafy greens are best consumed raw.

Okay I hope this info inspired you as much as it inspired me to add in another powerful health enhancing idea to my day. This is how I see building on health… I try to add in more of the good stuff. It seems easier that way, than looking at everything from the point of ‘taking away’. 🙂

Slow Cooker Roast Beef

Mmm Mmm cooking just doesn’t get any easier then this! In under 5 minutes I can get these ‘one pot wonders’ ready to cook.

I have been making One Pot Wonders for years. They are the easiest, fastest, and least complicated things to cook. Whether you use a slow cooker, Instant Pot, Cast Iron Pot, or sheet pan, I call em all ‘One Pot Wonders”. They can be very health too.

So Easy!

It doesn’t get much better than this especially if you are busy with life and work and don’t have a lot of time to prep for cooking or for actual hands on cooking.

In today’s one pot wonder, I put into the slow cooker, 2 carrots on the bottom under for the roast…like a little rack :-), the roast seasoned with salt and pepper, some potatoes and onions around the side and then topped with a no name brand tomato and herb sauce and a little water in the bottom. I then put a little seasoning salt on the whole thing.

I will slow cook this all day and it will be delicious! When looking for your tomato sauce I just use the kind you would use for pasta but look for low sodium, low sugar content (under 5 gm) and with no preservatives that are not natural. This makes it healthier for the fam.

Oh and if you are wondering how to cook it in the slow cooker? That my friends you will have to figure out. It’s called ‘getting to know your slow cooker’. 🙂 I personally use the old fashion kind that has High, Low, and Off. lol. My older sister brought over a digital one on Christmas Eve full of meatballs earlier in the day for me to use later that night, and ummm let’s just say the struggle was real 🙂 The good news is you can pick up slow cookers galore at the second hand stores! I have several. Some of them even have a ‘stay warm’ setting which is handy.

I personally am not a meat and potatoes person, but my hubby will gobble this all up and if we are lucky there might even be some beef left… and don’t forget saucy juice left in the bottom of the pan which I can use to make something else like a delicious soup. I waste nothing. Even if there is a potato left, it will be used for breakfast potatoes, to thicken soup, etc. etc. There are hundreds of amazing uses for small amounts of left overs. 🙂

Okay well gotta run and get ready to meet someone for lunch that I met at the Landlord’s meeting last week. I will be sharing some tips on being a landlord… or landperson? 🙂 Either way it’s all good. 7 Ways to Add in More Gratitude in Your Life

Being grateful is one of the most beneficial strategies you can use to improve your overall health. It helps with well-being of body, mind and spirit.

When you are grateful for something… anything at all, it sends a powerful message to everyone of the cells in your body that all is well.

Here Are 7 Ways to Help

  1. Keep a Gratitude Journal – One of the ways to become more grateful involves practicing intentional gratefulness by writing down the things you are grateful for each day. You don’t have to be super detailed, just write bullets about your day and the things that brought you that feeling. Almost everyone these days has a smart phone so you can use that too by using your Note section to jot down the things that you are grateful for as they appear in your day.
  • Remember What You’ve Overcome – One way to elicit grateful thoughts is to think about when you overcome something in your life. When you see how far you’ve come, you cannot help but feel good about it. Sometimes we forget about the struggles that we have been through and that we have survived them. Here you are in a new day and in a new time and that is something to be grateful for.
  • Count Your Blessings – Each day take some time to actively count your blessings. You can do this by adding to your list and also observing everything around you from the moment you get up in the morning until the moment you retire at night. Ex. gratitude for the bed you sleep in, your comfy pillow, the smell of hot coffee etc. etc.
  • Keep Track of Those Things That Make You Feel Grateful – When you are living your life if you get a sudden feeling of gratitude, instead of letting it pass, note it. Write it down so that you can think about it more often. Think back also to other times that you have been grateful and get back into that feeling. For example, maybe somebody gave you a ride when you needed it but didn’t expect it and you were so grateful. You can activate the feelings of gratitude even by reflecting on past situations! 🙂
  • Tell People Thank You & Do It Often – When people help you, are good to you, polite, and do things for you always tell them thank you. Even if it’s their job to do it, be the type of person that is a bright light in their day too by verbally telling them thanks. You can never say thank you enough 🙂
  • Speak Positively – Always speak positively and use phrases that are positive and hopeful. When you speak as though things are going well they will go well and things will flow much easier in your life because you expect it to be that way and you also declare it so through your words. Most people do not realize just how powerful their words are!
  • Be Persistent – sure there will be some days that are better then others and things are not always rosy but as a long term plan, keep going through the motions by saying thanks, keeping your journal up, meditating, using prayers of thanks, and being hopeful… all will go a long way to triggering the right feelings of gratitude that you can conjure up whenever you need them.

As you focus on gratitude, I am sure you will find more and more things to be grateful for. It is as though the Universe ‘brings it on’ as per your request. You may notice things like enjoying the sound of rain, the smell of freshly cut grass, the smile on your child’s face as they work on their art project… These moments begin to fill you with grace and gratitude and life takes on a whole new depth.

Fabulous Fruits As Medicine

I just finished washing up my medicine that I picked up at the grocery store today. 🙂

Seriously this is exactly how I see fruit! Fruit is a true gift from the Gods. It is loaded with nutrition and is easily assimilated by our bodies.

I love preparing my fruit so that it is ready to go and I also like to leave my fruit out in plain view so that it calls to me to eat it as I walk by. Sometimes you just can’t resist and this is a good thing. 🙂

If you look at fruit as the gift of natural medicine that it is, you start to appreciate it more and you will get even more benefit when eating it, after appreciating it. To me, fruits are truly magical in their ability to both provide nutrition to the body and to heal imbalances in the body.

So I sometimes answer question over on Quora.com And today I answered this one so I thought I would just pop my answer over here for the folks who follow this blog. Here it is:

Q: Is it healthier to be a vegan, vegetarian, or have a little bit of organic meat in your vegetarian diet?

I think it depends on your preference and enJOYment of food. If you focus on getting nutrients into the body, enJOYing your food, sourcing high quality food products that are natural and organic and cultivated responsibly and with the environment in mind, you can develop a daily diet that resonates with YOU! 🙂 I always say to people to listen to their bodies. The body always knows what is for its highest good and every body is different 🙂 Of course adding in lots of plant based and natural foods is the best.

But the key to any healthy daily diet working is that it must be enJOYable and life giving. It must make you smile both inside the tummy and on your lips while you are enJOYing eating it. Food has an energy and the more life force (closest to its nature and source) the better.

And personally, I recommend supplementation to fill in the gaps. In my opinion, it is nearly impossible to get the required nutrients from food alone. We live in a toxic world filled with pesticides, herbicides, heavy metals, depleted soils, unsafe food handling, and the list goes on.

Saunas For Detox & Relaxation

Have you ever had a sauna or a sauna bath as it is often called? If not, you might want to add this to your list of self-care ideas for 2020.

After having a sauna you feel both amazingly clean and cleansed. Sometimes I go to my gym just to enJOY a nice hot sauna that I don’t have to chop wood and light the fire for :-)….. especially on a 𝕔𝕠𝕝𝕕 𝕨𝕚𝕟𝕥𝕖𝕣’𝕤 𝕕𝕒𝕪. In fact I just might go have one this afternoon!

Saunas have been around for 1000’s of years. Saunas are a great way to get a deep cleanse of the body and to sweat out toxins and impurities and the best part is that they are so relaxing and enjoyable!

The Finnish culture is well known for their saunas pronounced ‘sownaas’ or something like that. 🙂

There are different types of saunas. The first saunas were holes in the ground, with a fire pit in the center and a roof to cover the fire, keep the heat inside and protect everything from the outside elements such as rain and snow. Today saunas usually consist of a small building or room in a house made of wood, usually cedar which smells amazing, and a stove of some sort; either wood or electric. There are also infrared saunas which are well known and used by advocates for personal health and wellness. And let’s not forget steam rooms. You see these often at gyms and spas.

Staying in a sauna not only helps to detoxify through sweat but using a sauna helps to promote blood flow, open nasal passages and drain sinuses, provide more oxygen to tissues and organs and even for some provide relief from aches and pains from arthritis and inflammation. Suffers of asthma sometimes find benefit too. The secret is to customize the usage to both your pleasure factor and health conditions.

And of course if you have any health issues please research how to safely use a sauna in appropriate amounts of time for your particular health condition. Many people can feel light headed while using a sauna so it is important to start off very gradual in the amount of time you spend in a sauna and it is very important to stay hydrated and to rehydrate by drinking lots of good quality water. Eating plenty of fruits after is also a great way to rehydrate and also to add micronutrients into the body such as vitamins and minerals.

Those with blood pressure issues need to be extra careful but keep in mind saunas are known for their role in helping with cardiovascular health so be sure to do your research and to discuss with your health care provider.

One of the things I really like about saunas is they help the liver a lot by removing toxins and getting the blood flowing throughout the body. These are two jobs that our livers handle out of many. Liver health is so important these days as we are seeing an epidemic of ailments such as viral overload, fatty liver, congested liver, sluggish liver and the list goes on.

In conclusion saunas not only offer natural detoxification, they are also relaxing and enjoyable. They help to relieve pain, stress and anxiety so why not pamper yourself more by adding in regular ‘sauna baths’ into your self-care routine going forward in 2020. Kale Meets Beet! True Love Forever

This juicing recipe has the added weight loss benefits by adding lemon and cinnamon.

Ingredients:

  1. medium beets, scrubbed, halved 4 cups Kale

1 medium cucumber

¼ lemon

¼ teaspoon cinnamon

Directions:

Add all ingredients to juicer, alternating between the ingredients. Serve in a glass with cinnamon whisked in.

Celery Juice & Breast Health

Breast health very much ties in with our lymphatic health.

Our bodies have a network of lymph vessels and lymph nodes which area part of the body’s immune system also known as: The Lymphatic System. The Lymph System collects fluid, waste material, and other things such as viruses and bacteria that are in the body tissues, outside the bloodstream, and moves them along for disposal from the body.

In the same way that veins collect and carry blood through the body, lymph vessels carry a watery yellow fluid called lymph. Lymph flows through the lymphatic system and eventually drains into veins. This system helps to get rid of waste products from the body and to keep things moving along.

The Liver

The liver ties in here too. The liver being the master filter moves along toxins as well. An overburdened, sluggish and stagnant liver can make for a comprised removal of these toxins and invaders in the body both impairing the liver and the immune system, not to mention the circulatory system. Celery Juice for Breast Health

I am a big proponent of drinking celery juice daily. It helps the lymphatic system, the liver and more! At our wellness centre “Superior Shores Wellness Centre” in Thunder Bay, Ontario, we focus very heavily on breast health by providing Thermal Imaging for our clients as well as education on prevention, ways to move lymph, diet advise, supplementation suggestions and more. Beet Juice Plus

Beetroot is a rich source of essential minerals and vitamins and is, therefore, a beneficial addition to your diet. They are a super nutrient dense food that are good for so many things including blood purification.

Beetroots are high in fiber, essential micronutrients like vitamins C and B9, and minerals like potassium, iron, and manganese, among others.

Beetroot also contains nitrates, which are converted to circulation-improving nitric oxide in the body. Additionally, beetroots contain antioxidant compounds such as betanin, among others, which provide a number of health benefits. Here is a handy juicing recipe using beets.

Ingredients:

  1. large beet, scrubbed, halved 4 cups baby spinach

½ Fuji apple, cored

Dash of Nutmeg or Cinnamon (optional)

Directions:

Add all ingredients to juicer alternating between the ingredients being sure to end with fleshy fruits. Pour into a glass and whisk in nutmeg or cinnamon.
